What I've Been Eating 11/9 - 11/15

I forgot to hit publish! So, here you go.

Wednesday 11/9
Breakfast: Coffee with almond milk

Lunch: Leftover beef vegetable stew with shredded cheddar cheese, and chocolate almond milk (8 oz)

Dinner: Acorn Squash with butter, fettuccine alfredo (1 cup prepared)

Snacks: small frozen coke from speedway, 1 pkg Jack Link's beef jerky, 1/2 cup cottage cheese, 2 oz dark chocolate almonds.

Total Calories: 1,768

Thursday 11/10
Breakfast: Coffee with almond milk

Lunch: Chick Fil A: spicy chicken sandwich, fruit cup, lemonade

Dinner: Buffalo chicken sandwich on whole wheat with ranch

Snacks: remaining 1/2 serving of beef vegetable stew with cheese, dark chocolate almonds, gogo squeeze apple strawberry, 1 fruit rollup

Total Calories: 1,727

Friday 11/11

Breakfast: Went out with a friend/ex to Bob Evans for brunch: I got the classic breakfast with scrambled eggs, sausage patties, and french toast (which is absolutely the BEST I've ever had). Coffee to drink

Lunch: None, still SO full from brunch

Dinner: Tyson's Honey BBQ tenders, the rest of my bag.

Snack: Lance whole grain peanut butter crackers

Total calories: 1,506

Saturday 11/12
Breakfast: Coffee with almond milk, Halo tangerine, s'mores granola bar (food club brand)

Lunch: out with Isaiah, a friend, and her daughter. Mcdonalds
Ranch Snack Wrap, grilled (2), medium fries, medium french vanilla iced coffee

Dinner: Cottage cheese, air popped popcorn (movie night ftw)

Snacks: Mini chips Ahoy, 1 pkg

Total Calories: 1,477

Sunday 11/13
Breakfast: Sausage gravy & biscuits, bacon, cheddar, ranch crack potatoes

Lunch: Grandma's American spaghetti (aka, baked spaghetti with tomato juice, ground beef, and colby longhorn cheese), mashed potatoes, my mom's garlic bread (bread, butter, garlic salt, baked), grandma's homemade applesauce

Dinner: None. Lunch was late, so I wasn't hungry

Snacks: mini chips ahoy, peanut butter crackers

Total Calories: 1,624

Monday 11/14
Breakfast: Steak, Egg & cheese Mcmuffin, Large french vanilla iced coffee

Lunch: None. School, and then Isaiah had a doctor's appointment

Dinner: Manwich Sloppy joe with ground turkey and cheddar cheese. Lays potato chips

Snacks: about 3/4 serving of cheez-its, sweet tea with splenda, Tortilla chips (Aldi brand -- Clancy's) and tostito's salsa con queso, medium.

Total Calories: 1,878

Tuesday 11/15
Breakfast: scrambled eggs with cheese, Halo tangerine, 1 1/2 cups lemonade.

Lunch: Buffalo chicken sandwich with ranch on whole wheat, medium granny smith apple with 2 tbsp peanut butter

I did take the apple apart to eat it, just ha the peanut butter in the middle for transport to Isaiah's school.

Dinner: 6 Totino's Pizza Rolls

Snacks: Mini Chips Ahoy!, Aldi unsalted, dry roasted peanuts, and 9 oz chocolate almond milk

What I've Been Eating (with pictures) 11/2-11/8

Wednesday 11/2
Breakfast: McDonald's Sausage McMuffin, hashbrown, large iced vanilla coffee

Lunch: Teriyaki salmon, romaine salad with cheese and ranch

Dinner: Acorn squash half, with butter/salt (made them for my mom and myself, am I the favorite daughter yet?) and 6" Subway chicken bacon ranch, with spinach.





Snack: Breakstone's cottage cheese (2%) and 8oz lemonade


Total calories 1,987

Thursday 11/3

Breakfast: Coffee (8 o'clock chocolate mint, ID creamer, almond milk), Starbucks chocolate smoothie
How I had to make coffee last week after my coffee maker broke. :-( Luckily, this weekend I got a new (to me) Bunn

Lunch: my remaining acorn squash and Subway from the night before

Dinner: Teriyaki salmon and yellow squash sauteed in butter

Snack: Carrot chips & roasted red pepper hummus (sabra) 2 tbsp

Total Calories: 1,406

Friday 11/4

Breakfast: Coffee, and whole wheat toast (100% whole wheat from Nature's own (made with honey) 2 slices, 1.5 tbsp peanut butter

Lunch: None, took a nap instead

Dinner: Giant eagle fried chicken, 1 piece, 2/3 cup Betty Crocker cheddar & bacon potatoes

Snack: 14 mike n ikes (yes I counted, ha!) and more coffee

Total calories: 1,004

Saturday 11/5

Breakfast: Coffee, Chobani flips coffee break bliss

Lunch: Pizza Oven pizza - sausage, 2 slices. (Isaiah had a celebration for the end of flag football)
and when we got home, carrot chips and hummus

Dinner: Tyson's BBQ chicken tenders 6.15 oz

Snacks: Coffee, fudge round, and Vienna sausages

Total calories: 1,826

Sunday 11/6

Breakfast: Coffee, with regular milk (1 oz) and the clean eating waffles with peanut butter (link in the previous week of food post)


Lunch: baked chicken leg, 1/2 cup mashed potatoes, 7 oz green beans, 1/2 cup sweet corn (with butter)

Dinner: buffalo chicken sandwich: Walnut creek buffalo chicken lunch meat, whole wheat bread (above), 2 slices of Kraft American cheese, 1 tbsp Ken's ranch; Also, 1.5 cups of broccoli florets with 1 tbsp ken's ranch

Snacks: Coffee with almond milk, and Crystal farms string cheese (1)

Total calories: 1,435

Monday 11/7

Breakfast: Coffee!

Lunch: Nothing until 3, so I listed it under snack

Dinner: 1 serving of beef vegetable stew (my mom's) and 1/2 serving of my dad's chili, each with 5 townhouse original crackers



Snack: Sabra Roasted red pepper hummus, 4 tbsp, 85 g sweet peppers sliced, 1/2 cup Breakstone 2% cottage cheese

Tuesday (today) 11/8

Breakfast: Coffee. I think I need to start eating with breakfast again. I started getting hungry earlier (like 10:30 vs 12)

Lunch: Leftover beef vegetable stew, 2 oz Blue Diamond dark chocolate almonds, and 1 cup of Swiss Lemonade



Dinner: Swenson's Double cheeseburger, 1 order of potato teezers, and a California (sprite mixed with grape drink)

Snack: I went to a crafting night at my parents' church to make wreaths (mine is nowhere close to done, good thing it's a Christmas wreath) and one of the ladies made gluten free brownies (Krusteaz brand) with vanilla buttercream frosting (from the Giant Eagle bakery)

What I've Been Eating (with pictures) 10/26-11/1

Wednesday 10/26

Breakfast: McDonald's again. Steak, Egg, & Cheese McMuffin, Hash Brown, Medium French Vanilla Iced Coffee

Lunch: Whole Wheat tortilla, Ragu spaghetti sauce, shredded cheddar cheese, broccoli florets, Ken's Ranch

Dinner: homemade cheese quesadilla: whole wheat tortilla (2), shredded cheddar, and I can't believe it's not butter spray.

Snacks: raided the candy again: fun size skittles, fun size kitkat

Total Calories: 1,603

Thursday 10/27

Breakfast: Same as yesterday, except they gave me a bagel instead of mcmuffin like I asked.

Lunch: Isaiah didn't have school, so he stayed with my dad. I had lunch there: giant eagle whole grain bread, Isaly's chip chop ham (2 oz), french onion dip (2 tbsp) and 2 oz lay's wavy potato chips

Dinner: Healthy Choice steamers: General Tso's Spicy Chicken meal, 1 cup pomegranate juice

Snack: sunday nut cone (Aldi)

Total calories: 2,250 (thanks bagel- would have been under if not for you...)

Friday 10/28
No school for Isaiah, and a late morning class for me = waffles! made clean eating waffles (recipe here: http://ifoodreal.com/clean-eating-waffles-recipe/) topped with 1 1/2 tbsp peanut butter. Also, finally found an almond milk I like: Blue Diamond. So, 1 cup chocolate almond milk as well.

Lunch: Took a nap with Isaiah instead, so no lunch.

Dinner: Healthy Choice steamer: sweet and sour chicken, 1 cup pomegranate juice

Snack: Pringles, and (about an hour after breakfast) coffee: Eight O'Clock chocolate Mint (12 oz) with 2 tbsp International Delight Hershey's Chocolate Caramel creamer.

Total Calories: 1,478

Saturday 10/29

Breakfast: Coffee (same as snack yesterday), and an apple, banana, spinach smoothie with chocolate almond milk

No lunch.

Dinner: Pizza hut medium pepperoni pizza (2 slices) baby carrots (3 oz) and hot wings (baked) 4 oz

Got to go the Cav's game (my mom's work gave her their suite at the Q arena for the night) so I had popcorn (about 4 cups), onion rings from Michael Symon's B Spot Burgers, and roughly 20 oz of Sierra Mist




Total Calories: 1,959 I know this one is nowhere near accurate. But with this game, I knew it wouldn't be.

Sunday 10/30
We woke up at 10:00, after getting home at 1:00am from the game.

Breakfast: Coffee: 8 O'Clock chocolate mint, ID hershey's chocolate caramel, and 1 oz chocolate almond milk

Lunch: Rigatoni (rigatoni noodles, rotini noodles, spaghetti sauce, 93% lean ground turkey, shredded mozzarella cheese) and garlic bread (stale hot dog buns, country crock spread, garlic salt)

Dinner: Tyson's Honey BBQ chicken tender (3.84 oz) Uncle Ben's whole grain medley rice (1 cup)
Pomegranate seeds.



Snacks: none.

Total calories: 1,380



Monday 10/31

Breakfast: None. My lovely child decided to inform me that his shoe box habitat (which was already made) needed to have a foreground, middle ground, and background. Twenty minutes before we had to leave. *facepalm*
Bonus: my developmental psych professor handed out candy (skittles and lifesavers big ring gummies) for Halloween.

Lunch: Tyson's Honey BBQ chicken tender (4.60 oz) Uncle Ben's whole grain medley rice (1/3 cup, because Uncle Ben's lies when it says one package has 2 servings) and 3 oz carrot chips, and finally the coffee: Eight O'Clock chocolate mint, 1 oz ID Hershey's chocolate caramel, and 1 oz chocolate almond milk



Yum! Coffee!!!
Dinner: With the parents. Stuffed pork chops and mashed potatoes.

You can definitely tell I used a measuring cup for the mashed potatoes - haha. They held the shape really well


Snack: I was craving something spicy, so I had some left over hot wings (baked, from Acme)

Total calories: 1,686

Tuesday (today) 11/1 

Breakfast: Scrambled eggs, with shredded cheddar cheese, Eight O'Clock chocolate mint coffee, 1 tbsp ID Hershey's chocolate caramel, and 1 tbsp chocolate almond milk

I was so hungry I forgot to take a pic of the eggs, and only remembered 3/4 of the way through my coffee.
Lunch: Cheese quesadilla: whole wheat tortillas, shredded cheddar cheese, franks red hot. And 8 oz of Smith's lemonade.


Dinner: TBD. I planned on making acorn squash for dinner, but instead started cleaning the kitchen after making Isaiah's dinner (grilled cheese and applesauce) and now it's too late to start the whole process.
Maybe I'll just have a quick salad. Will update once I've actually eaten.

Snack: 1 oz Snyder's BBQ chips.

Coffee filter for chips, because I'm not going back to a regular coffee maker and I have 6545654132 filters.

Total Calories (so far): 1,201

What I've Been Eating (with pictures) 10/19-10/25

Wednesday 10/19
Breakfast: Chobani Flips coffee break bliss

Lunch: decided to forego the lettuce. Buffalo chicken lunch meat, string cheese (Crystal Farms, mozzarella), 1/2 cup Breakstone's 4% milk-fat cottage cheese, 1 tbsp Ken's Ranch

Dinner: KFC. Isaiah had been begging for weeks, so I caved. Overall not too bad. I got their $5 box meal: Extra crispy tenders, biscuit, 1/2 of my potato wedges, and an unsweetened iced tea.

Snacks: Small frozen coke, 1 package beef jerky

Isaiah and I went to visit my dad at his church after school, so Isaiah could ride his bike and I could help him practice for football (Bad mommy alert: I managed to bean him in the face, right between his hands, and gave him a bloody nose. Ooops)

Total Calories: 1,532

Thursday 10/20

Breakfast: the rest of my $5 meal from KFC (potato wedges and chocolate chip cookie) and 2 of Isaiah's leftover chicken tenders

Lunch: 1 cup Gardetto's roasted garlic rye chips

Dinner: 6" Subway: turkey, provalone, spinach, ranch, on Italian herbs & cheese bread

No snacks

Total Calories: 2,007

Friday 10/21

Breakfast: the cookies I got from Subway Thursday, and 1 oz of Snyder's BBQ chips (not a great breakfast..)

No lunch, I forgot to pack a lunch and no time to run home between classes, however I did have an apple (medium golden delicious) around 2pm while waiting to pick Isaiah up from school.

Dinner: I didn't plan, which is sucky, so it was a grab anything that you see kind of night. 5 pepperoni pizza rolls, Pringles

Snacks: 3 Chips Ahoy cookies, and a Fudge Round cookie

Total Calories: 1,603

Saturday 10/22
No pictures of food, but I did include one of Isaiah at trunk or treat.

Breakfast: Scrambled Eggs, with salt and pepper

Lunch: We had my church's trunk or treat/harvest party. One of the couples in the church own an ice cream shop and brought in ice cream. 1 cup of chocolate ice cream (TMI: this was when I realized I was PMSing... )

Dinner: 1 cup chocolate ice cream (I brought home leftovers... they made everyone take at least 2 cups)

Snacks: 1 string cheese, pringles (ugh, get out of my house!)

Total calories: 987, although it feels like it should be more with that much junk.


Sunday 10/23

 Woke up late, so no time for breakfast before church.

Lunch at my parents' house: 1 chicken leg, baked; 1/2 cup mashed potatoes; Salad: romaine salad, baby carrots (3 oz), 1 tbsp Kraft Ranch; 1 cup of apple cider

Dinner: Pumpkin pie ice cream (from Saturday), Angel hair pasta, Ragu Parmesan and Romano sauce, shredded cheddar cheese, grilled chicken tenderloins, and 3 oz carrot chips;



Snacks:  Pringles, 3 chips ahoy cookies, 1 string cheese, and 1 snack size hershey bar (from Isaiah's trunk or treat loot)

Total Calories: 1,674

Monday 10/24
No pictures today. My bad. ☹

 Breakfast: woke up late again. McDonalds to the rescue (face palm) Sausage biscuit, hashbrown, strawberry banana smoothie (small)

Lunch: Same pasta as the previous night, with chicken tenderloins.

Dinner: Stuffed Pepper (93% lean ground turkey, salsa) homemade scalloped potatoes: white potatoes, pepper, garlic salt, milk, and campbell's healthy request cream of chicken soup

No snacks. Again, practiced football with Isaiah after dinner.

Total calories: 1,550

Tuesday (today) 10/25 

Breakfast: I wasn't in the mood for anything, but I made myself eat a spoon (2 tbsp) of peanut butter

Lunch: Apple slices (golden delicious apple, sliced with my mandolin to make apple sandwiches) with peanut butter, whole wheat tortilla, a little more than half an oz of the Ragu spaghetti sauce, and some shredded cheddar cheese

Dinner: 6 pizza rolls, 2 chicken nuggets (tyson) and 1/2 cup cottage cheese

Snack: 3 original chips ahoy cookies

Yogurt Dots: Pinterest Sunday

Another Sunday had rolled around and it's time to work on something from my Pinterest board.

Since it is the middle of summer, and it has been relatively hot lately, I decided to make frozen yogurt dots, found at One Good Thing by Jillee.

Another simple pin:

Take your yogurt; put it in a plastic baggie; snip off the corner; and put "dots" of yogurt over a nonstick pan. Then freeze for 2 hours.




This is where the impatience in me comes out. 2 hours to freeze little mounds of yogurt? Ugh!


I waited (not so) patiently and distracted myself by doing laundry.

Two hours later (give or take) out come the frozen yogurt dots:

Taste tester... ignore the massive amount of toys and stuff. :-)
Hmm... gotta think about this one

Two thumbs up!
My only complaint is that it may be too hot in my house for these--they began to melt shortly after removing them from the freezer.

Overall, Little I loved them and we will definitely make them again, or maybe in the form of a Popsicle.
